Triple Berry Almond Olive Oil Cake

Triple Berry Almond Olive Oil Cake

Personally I am new to the olive oil cake game, and after this cake, I am bummed that it took me so long to get on board! If you haven’t tried an olive oil cake yet, you may be thinking that that olive oil in a cake sounds odd. But it’s not! It is a complete game changer. The olive oil has a distant flavor with a slight spicy aftertaste and bitterness, which is well balanced with the sweetness of the cake. The cake is extremely moist in texture thanks to its use of oil instead of butter. Imbedded within the cake are the raspberries, blueberries, and blackberries. You can even top the cake with more berries for decor! The best part about this dessert is that it is easy to make and can be made ahead of time. For best results and flavor, I recommend using a high quality extra virgin olive oil for this recipe.

Peach Raspberry Galette

Peach Raspberry Galette

Back to school time also corresponds to nearing the end of peach season. But before that season passed, I squeezed in this Peach Raspberry Galette. A galette, or crostata, is a freeform pastry, or as I like to describe it, it is a flat pie. They are easy to make, and have a beautiful presentation. Making the dough can be the difficult component to the recipe, but if you have a food processor, it is significantly easier. If you don’t though, don’t worry, I don’t either (because girl doesn’t have any more space in her tiny kitchen) and I was still able to make it by hand without issues. After rolling out the dough into a large circle, you will top the middle with the fruit, fold up the sides, and then toss it in the oven. And that's it! The galette crust is flaky, while the inside is filled with sweetness from ripe peaches and raspberries. To balance out some of the sweetness, the fruit is tossed in a dash of cardamom, which adds a level of richness and depth to the dessert. This summer dessert pairs perfectly with vanilla ice cream, or you can keep it simple with a dusting of powdered sugar!

Lemon Raspberry Monkey Bread

It was the breakfast item that my friends and I from elementary school to high school would quickly dig into after a sleepover.  It was the dessert after a team dinner with my high school tennis team. It was the breakfast that my entire family would enjoy while opening presents on Christmas morning. And it was the breakfast that my mother would make for me when I came home during school breaks. While I love...
